Holiday baking. Do you do this? Are you the baker or the eater…maybe both? My husband doesn’t care for sweets (crazy, I know!) so I don’t do a lot of holiday baking. His children (14 and 25), my bonus children, are coming for Christmas this year so I will probably do more than I have in a few years.
When my own daughter was little we made traditional Christmas Sugar Cookies every Christmas, having load of fun decorating with sprinkles, frosting and edible glitter. Those take more time than I want to spend now in my, cough, old age. Laughs There is still one cookie I make every year sometime over the holiday though. I have seen it called a few different things; Snowballs, Russian Tea Cakes, but the ingredients are pretty close if not exact. It’s similar to a shortbread with pecans, rolled in powdered sugar while still warm so it melts into the cookie. They leave your fingers a mess but they are well worth it! Want to give them a try? 1 cup butter, softened
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup powdered/confectioners’ sugar
2 cups all-purpose flour
1 cup chopped pecans (or your favorite nut)
Powdered/Confectioners’ sugar for rolling after baking
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream butter and vanilla until smooth. Combine the 1/2 cup confectioners’ sugar and flour; stir into the butter mixture until just blended. Mix in the chopped pecans. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
3. Bake for 12 minutes in the preheated oven. When cool enough to handle, roll them in the powdered sugar. When completely cool, roll a second time.
